Toklas Bakery

Toklas Bakery sits at street level at 9 Surrey Street. On entering you first encounter an Italian-style marble and wood counter, displaying the baked goods of the hour. In the morning, we serve viennoiserie – croissants, pain au chocolat, cinnamon and cardamom buns, and often a fruit Danish. Breakfast dishes include a yoghurt with granola and fruit compote and fresh out the oven bread slices with butter and marmalade or Jam. Coffee is from the excellent Assembly roasters in Brixton. We rotate the blends to keep things interesting.

The offering changes through the day. From 8am we have a counter full of freshly baked seasonal pastries, with the addition of cakes from the afternoon. From 11am, we serve delicious Roman sandwiches, inspired by the flatbreads of Northern Italy - where breads are designed to be light, delicate and crisp when reheated. Fillings are kept simple and ingredient-led.

Our breads are available to purchase and are served in Toklas restaurant, as well as several excellent restaurants around London. The sourdoughs use a blend of organic flours and grains including heritage grain from Breurn Farm and stoneground flours from N.R. Stoates & Sons.

There are always sweet options too. Recent bakes include a poached apricot, vanilla custard, orange blossom brioche & chamomile syrup and a strawberry and elderflower spandauer. Our cookies have become staples – bitter chocolate and honey; tahini; and the vegan and gluten free ricciarelli.
